BAR-B-Q SAUCE II
1 - Tablespoon vegetable oil | 1 - cup water |
2 - bunch green onions | ½ - cup Worchestershire sauce |
2 - cups chopped onion | ½ - cup apple cider vinegar |
8 - large garlic cloves, chopped | ½ - cup apple juice |
2 - cups (packed) brown sugar | 1 - large chili crumbled |
1 - cup ketchup | 1 - Tablespoon ground cumin |
1 - cup tomato paste | 1 ½ - cup bourbon |
1 - cup Dijon mustard | |
Heat oil in
large heavy pot over medium heat. Add green onion, chopped onion, and
garlic. Saute until tender, about 15 minutes. Mix in all
remaining ingredients, adding bourbon last. Simmer sauce until thick
and reduced to 7 cups, stirring occasionally, about 1 hour. Season to
taste with salt and pepper. NOTE: Mustard seems to be too much. May want to add some thyme and cinnamon. |
