Cheese Blintzes
| 2 - eggs | Beat eggs, oil, and milk. Add flour and salt beating until smooth. Refrigerate 30 minutes. Melt butter in 7 inch pan. Fry 1 minute on 1 side only. |
| 2 - tablespoons salad oil | |
| 1 - cup milk | |
| ¾ - cup flour | |
| ½ - teaspoon salt | |
| ¼ - lb cream cheese | Combine.
Place 1 tablespoon filling on fried side and fold up. Fry all blintzes
until lightly brown on both sides. Refrigerate until serving. Serve with sour cream and blueberries. |
