Cheese Blintzes

 

2 - eggs Beat eggs, oil, and milk.  Add flour and salt beating until smooth.  Refrigerate 30 minutes.  Melt butter in 7 inch pan.  Fry 1 minute on 1 side only.
2 - tablespoons salad oil
1 - cup milk
¾ - cup flour
½ - teaspoon salt
   
¼ - lb cream cheese Combine.  Place 1 tablespoon filling on fried side and fold up.  Fry all blintzes until lightly brown on both sides.  Refrigerate until serving.

Serve with sour cream and blueberries.

¼ - lb cottage cheese
2 - egg yolks
3 - tablespoons sugar
